Sauteed Asparagus with CBD Coconut Oil
A springtime staple, asparagus is a versatile vegetable that doesn’t need much prep or seasoning to shine. In this dish we lightly cook asparagus, tomatoes, and scallions in CBD Coconut Oil and season with salt and pepper for a light, simple side dish.
2 tablespoons CBD Coconut Oil
16 asparagus spears
6 grape tomatoes, halved if large
2 whole scallions, sliced in pieces
Salt and pepper
Heat the oil to a skillet over medium/low heat. Once heated, add the asparagus.
Cook for 4-5 minutes, gently shaking the pan to cook evenly.
Add the tomatoes and the scallion and continue to cook for 2-3 minutes. Remove from heat and season with salt and pepper to taste. Toss well before dividing between two dishes.
Each serving has 25mg CBD. If you would like to reduce the potency per serving, reduce the amount of CBD Coconut Oil and substitute with your cooking oil of choice.
